Simple Gluten-free Cheesy Garlic Hoagie Buns

Look no further for the perfect gluten-free bun to uplevel any summer sandwich. The depth of flavor in these gluten-free cheesy garlic hoagies is unmatched, and yet, they are INCREDIBLY simple to make using Pamela’s gluten-free 1:1 flour blend. Yes, I have also made these with other flour blends, and you can find those notes below, but if you want to keep things incredibly simple, grab yourself a bag of Pamela’s 1:1 gluten-free flour blend and enjoy the most flavorful simple summertime sandwich buns. They come together in one bowl and will be warm fresh from the oven in under 3 hours.

Ingredients

  • 3 cups Pamela’s 1:1 gluten-free flour *
  • 3 tbsp maple syrup or sugar
  • 2 tsp instant yeast
  • 1 + 1/4 tsp salt
  • 1 cup milk, warm
  • 4 tbsp butter, softened + extra for rolling
  • 4 eggs, divided
  • 3/4 cup shredded cheese, divided
  • 1 tsp garlic powder

*Flour Note:

This recipe calls for Pamela’s 1:1 gluten-free flour specifically because the flour blend contains guar gum as the binder instead of xanthan gum.

Pamela’s 1:1 gluten-free flour blend binds stronger than other blends, that is why it works so great for the following recipes.

If you cannot find Pamela’s brand, here is what I have tested and also works with a blend containing xanthan gum (I specifically did my testing with Bob’s Red Mill 1:1 gluten-free baking flour). You will also need psyllium husk.

What to do (if you’re not using Pamela’s Brand Flour Blend):

  • Reduce the milk by 1/4 cup. Use 3/4 cup of milk, not 1 cup.
  • In a separate bowl, before mixing your dry ingredients, whisk 3 tbsp whole psyllium husk or 2 tbsp psyllium husk powder into 1/2 cup warm water. This will create a gel.
  • Mix this gel into your dry ingredients just before you add in your milk, butter & eggs.
  • proceed with recipe as written.

Directions

Step 1

Mix dry ingredients together.

Step 2

Add maple syrup if not using sugar.

Step 3

Mix in 1/2 cup of shredded cheese.

Step 4

Mix in milk, then butter, then eggs. Mix in 3 eggs, 1 at a time.

Step 5

Beat on high for 3 minutes. Cover in bowl & let rise for 1 hour.

Step 6

Grease or line a baking sheet with a silicone mat or parchment paper.

With buttered hands, take a handful of dough & roll into a log shape (alternatively, you can turn the dough out onto a lightly floured surface to divide the dough into 8-12 equal parts for shaping). NOTE: Do not over-shape or buns will be tough. Dough should yield 8-12 buns.

Cover with a towel or greased plastic wrap & let rise 45-60 minutes. Dough should approximately double in size.

Step 7

Just before baking, beat 1 egg for egg wash & gently apply to top of buns using a pastry brush.

Sprinkle remaining shredded cheese on top of buns.

Step 8

Bake at 350°F for approximately 25 minutes or until golden brown.

Remove from oven & butter top of buns (optional).

Notes

I make these using Pamela’s 1:1 Gluten-Free All-Purpose Flour Mix. Other 1:1 blends don’t tend to produce the same results as they use xanthan gum instead of guar gum as the binder. But if you don’t have access to Pamela’s brand, see my notes above for other flour blends.

Storage

These buns are best enjoyed fresh the same day they are baked. To store them, slice & freeze in an airtight container or freezer bag. Reheat in a toaster oven, toasted on a stovetop with butter, or microwave for about 30 seconds.

These gluten-free hoagie buns not only have incredible flavor and texture, but they are the EASIEST to make with everything being mixed in a single bowl.
