Notes
This recipe calls for Pamela’s 1:1 gluten-free flour specifically because the flour blend contains guar gum as the binder instead of xanthan gum.Pamela’s 1:1 gluten-free flour blend binds stronger than other blends, that is why it works so great for the following recipes. If you cannot find Pamela’s brand, here is what I have tested and also works with a blend containing xanthan gum (I specifically did my testing with Bob’s Red Mill 1:1 gluten-free baking flour). You will also need psyllium husk.
