Healthy Easter Chocolate Peanut Butter Eggs

Easter treats don’t have to be loaded with artificial dyes or refined sugars to feel special. These chocolate covered peanut butter eggs are one of my favorite ways to make something festive and nourishing—especially when little hands are involved in the kitchen.

They’re made with simple pantry staples, naturally sweetened, and boosted with Juice Plus+ Complete Plant Protein, which blends seamlessly into the peanut butter filling without changing the texture or flavor. The result? A rich, creamy center wrapped in chocolate that feels like a treat—but supports growing bodies and busy adults alike.

Ingredients

  • 1 cup peanut butter
  • 1/3 cup almond flour
  • 1/3 cup honey
  • 1/3 cup vanilla shake powder (I use Juice Plus+ Complete)*
  • 1 tsp vanilla extract
  • 2 cups chocolate chips

*In place of vanilla shake powder, you can substitute a 50/50 blend of almond flour & powdered sugar.

I have made these both WITH and WITHOUT the honey – both versions turn out great! So if you prefer less sweetness/ natural sugar, you can omit the honey with no issues.

Directions

Step 1:

Add all ingredients except chocolate chips into a food processor & blend until smooth.

Chill for 1 hour.

Step 2:

Remove from fridge & form egg shapes.

Place on a parchment lined baking sheet.

Chill for 30-60minutes.

Step 3:

In a small saucepan, melt chocolate chips over medium heat, stirring often.

Step 4:

Coat eggs in chocolate. Let harden & chill if desired.

  • Pot, bowl, or double boiler for melting chocolate
  • sheet pan
  • parchment paper

Ingredients
  

  • 1 cup peanut butter
  • 1/3 cup almond flour
  • 1/3 cup honey
  • 1/3 cup vanilla shake powder I prefer Juice Plus+ Complete
  • 1 tsp vanilla extract
  • 2 cups chocolate chips

Instructions
 

  • Add all ingredients except chocolate chips into a food processor & blend until smooth.
  • Chill for 1 hour.
  • Remove from fridge & form egg shapes. Place on a parchment lined baking sheet.
  • Chill for 30-60minutes.
  • In a small saucepan, melt chocolate chips over medium heat, stirring often.
  • Coat egg in chocolate.
  • Let harden & chill or freeze if desired.

Notes
