Healthy Easter Chocolate Peanut Butter Eggs
These chocolate covered peanut butter eggs are one of my favorite ways to make something festive and nourishing—especially when little hands are involved in the kitchen.

Ingredients
1
cup
peanut butter
1/3
cup
almond flour
1/3
cup
honey
1/3
cup
vanilla shake powder
I prefer Juice Plus+ Complete
1
tsp
vanilla extract
2
cups
chocolate chips
Instructions
Add all ingredients except chocolate chips into a food processor & blend until smooth.
Chill for 1 hour.
Remove from fridge & form egg shapes. Place on a parchment lined baking sheet.
Chill for 30-60minutes.
In a small saucepan, melt chocolate chips over medium heat, stirring often.
Coat egg in chocolate.
Let harden & chill or freeze if desired.
Notes
In place of vanilla shake powder, you can substitute a 50/50 blend of almond flour & powdered sugar.
