Gluten-Free Buttermilk Biscuits

Lightly, flakey Buttermilk Biscuits that melt in your mouth. These biscuits are so simple to make and even easier to enjoy! Whip these together in a flash for a savory breakfast with gravy or to go alongside your winter soups.

Gluten-free Buttermilk Biscuits

Ingredients:

  • 2 + 1/2 cups 1:1 gluten-free flour
  • 3 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup butter, chilled
  • 1 tsp salt
  • 1 tbsp maple syrup or sugar
  • 2 eggs
  • 3/4 cup buttermilk*

* If you do not have buttermilk, you can make it by putting 1 tbsp of lemon juice in a measuring cup & filling to 1 cup with milk. Mix & let sit for 5-`10 min. Then mix again before using.

Directions:
1. Preheat oven to 450°F.
2. Whisk together flour, baking powder, baking soda, sugar & salt in a large bowl.
3. Slice chilled butter into 1/4” pieces & add into mixture.
4. Press butter chunks flat. NOTE: I find it easiest to use my hands, but you could also use a pastry cutter or cheese grater to get small chunks of butter incorporated into the flour mixture.
5. Mix butter into flour mixture until small pebbles form.
6. In a separate bowl, whisk together eggs & 3/4 cup buttermilk.
7. Make a well in the center of flour mixture & pour in eggs & buttermilk mixture.
8. Mix until a soft dough forms. Dough will be slightly wet. If dough seems dry, add an additional 1 tbsp buttermilk.
9. Turn dough out onto a large piece of plastic wrap or parchment paper sprinkled with flour.
10. Sprinkle flour over top of dough. If the dough seems a bit sticky yet, place another layer of plastic wrap on top.
11. Form dough into a rectangle & roll out to 1″ thick.
12. Remove top plastic wrap & fold dough in half from bottom to top, then fold in half again from side to side.
13. Cover dough with plastic wrap & roll out to 1/2″ thick.
14. Remove top piece of plastic wrap & cut dough into 12 biscuits. NOTE: For round biscuits, a regular mouth mason jar band works well.
15. Place biscuits on a silicone or parchment lined baking sheet.
16. Bake for 14-18 minutes, or until tops are starting to turn golden brown.
17. Remove from oven & let cool for 10 minutes before serving.
