Gluten-free Sourdough Dutch Baby

For years I saw other people make these puffy, absolutely delicious looking Dutch Babies. I thought it was one of those foods that could only be made with wheat flour and we were just going to have to miss out. Could a beautiful puff actually be achieved with gluten-free flour?

Well, I am here to report that yes, indeed, the most INCREDIBLE Dutch Baby can be baked and enjoyed using gluten-free flour. This recipe specifically leans into benefits of gluten-free sourdough by using active or discarded sourdough starter.

Don’t have a gluten-free sourdough starter? No problem. You can simply use 1/3 cup more flour and 1/3 cup more milk in place of the 2/3 cup starter.

Ingredients

  • 3 eggs
  • 2/3 cup sourdough starter (active or discard)
  • 1/3 cup whole milk
  • 1/3 cup 1:1 gluten-free flour
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 1 tbsp maple syrup
  • 3 tbsp butter

Directions

1️⃣ Heat oven and a 10” cast iron skillet to 425°F

2️⃣ Add everything except butter to a blender and blend until smooth.

3️⃣ Carefully remove hot skillet, add butter, and let it melt.

4️⃣ Pour in batter and bake 20 minutes (don’t peek!). Pour your batter somewhat slow so all the butter doesn’t end up on top of your batter (this will cause it to not puff up as it should). A little on the edges is totally fine!

Top with powdered sugar, fresh fruit, maple syrup, or whatever you love 🤍
