Homemade Goulash (Gluten-free)

Made in just one pot, it’s hearty enough to feel comforting while still light enough for summer evenings. Tender pasta, savory ground beef, and a rich tomato sauce come together with simple pantry ingredients for a meal that’s both nourishing and easy to pull off on busy nights.

Ingredients
  

  • 1 pound ground beef
  • 12 oz gluten-free pasta medium sized pasta like elbows or shells work well*
  • 2 cups beef broth chicken broth will work, too
  • 2 cups tomato juice
  • 1 medium sized onion chopped
  • 3 cloves garlic chopped
  • 1/3 cup ketchup
  • Salt and pepper to taste

Instructions
 

  • In a large skillet or deep pan, cook the onions and ground beef over medium heat until fully cooked. If there is excessive grease, drain some off.
  • Add the garlic and cook for about 1 minute before adding the liquids.
  • Add the tomato juice, ketchup and broth and bring to a gentle boil.
  • Add the noodles and bring to a gentle boil.
  • Cook for 10–15 minutes, stirring occasionally, until the pasta is tender.
  • Remove from heat and let the noodles rest for a few minutes before serving.
