Homemade Goulash (Gluten-free)

Made in just one pot, it’s hearty enough to feel comforting while still light enough for summer evenings. Tender pasta, savory ground beef, and a rich tomato sauce come together with simple pantry ingredients for a meal that’s both nourishing and easy to pull off on busy nights.

- 1 pound ground beef
- 12 oz gluten-free pasta medium sized pasta like elbows or shells work well*
- 2 cups beef broth chicken broth will work, too
- 2 cups tomato juice
- 1 medium sized onion chopped
- 3 cloves garlic chopped
- 1/3 cup ketchup
- Salt and pepper to taste
In a large skillet or deep pan, cook the onions and ground beef over medium heat until fully cooked. If there is excessive grease, drain some off.
Add the garlic and cook for about 1 minute before adding the liquids.
Add the tomato juice, ketchup and broth and bring to a gentle boil.
Add the noodles and bring to a gentle boil.
Cook for 10–15 minutes, stirring occasionally, until the pasta is tender.
Remove from heat and let the noodles rest for a few minutes before serving.
