When summer gardens are overflowing with fresh zucchini, these gluten-free, dairy-free zucchini fritters are the perfect way to put that seasonal bounty to delicious use. Made with simple ingredients like fresh zucchini, egg, gluten-free bread crumbs, garlic, and a touch of salt, these crispy, golden fritters are packed with incredible flavor in every bite.

Instructions
Shred zucchini using your preferred method. I use my Ninja Food Processor with the disc shredder.
NOTE: If your zucchini is large and contains a soft spongy center, scoop out the middle before shredding.
Place 4 cups of the shredded zucchini into a bowl lined with a clean tea towel.
Sprinkle the zucchini with the salt, mix it in, and let it sit for 5 minutes. Use the tea towel to squeeze the water out of the zucchini. You should be able to remove 1/2 - 1 cup of liquid. Discard the liquid.
Return the Zucchini to the bowl. Add the bread crumbs and garlic. Stir to combine. Then mix in the egg.
Heat approximately 2 tablespoons of oil in a large skillet over medium-low heat. Using a 1/4 cup measuring cup, drop the mix into the pan and flatten the patties to about 1/4" thick. You should get about 6 patties total.
Cook the patties until the bottoms are golden brown (should take about 7 minutes), then flip and cook the other side (about 5 minutes).
Transfer the patties to a paper towel lined plate and sprinkle lightly with salt.
