Gluten-Free Pumpkin Bars

These have become a family favorite in our home, and they’re also the bars I take to practically every event. Whether it’s a family gathering, a church potluck, or a fall get-together with friends, these pumpkin bars are always a hit. Even people who don’t need to eat gluten-free reach for seconds!

Equipment

  • 11x17" Baking Pan

Ingredients
  

For the bars:

  • 2 cups 1:1 gluten-free flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups sugar
  • 2 cups pumpkin puree
  • 4 eggs
  • 3/4 cup avocado oil or cooking oil of choice

For the frosting:

  • 8 oz cream cheese
  • 6 Tbsp butter
  • 2-3 tbsp milk if needed to thin
  • 4 cups powdered sugar
  • 1 tsp vanilla

Instructions
 

For the bars:

  • Mix together the sugar, pumpkin, eggs & oil.
  • In a separate bowl, mix together the flour, cinnamon, baking soda, baking powder & salt.
  • Mix the dry ingredients into the wet ingredients.
  • Bake in a greased 11x17" pan at 350°F for 20-30 min.

For the frosting:

  • Cream the cream cheese & butter until smooth.
  • Then add the powdered sugar, vanilla & milk to desired consistency.
  • Frost the bars once they are completely cooled. Enjoy!
