Creamy Bacon Asparagus Pasta
LaNay Hervey
This dish originated from my grandmother's creamy asparagus she used to make every spring when I was growing up. I had the thought that adding bacon sounded good, and then decided to make it substantial side by adding some pasta.
Prep Time 15 minutes mins
Cook Time 20 minutes mins
Total Time 35 minutes mins
- 1-2 cups cups chopped asparagus
- 4 slices bacon cooked and chopped
- 1 cup gluten-free pasta
- 1 batch cream of anything soup
In a medium saucepan, prepare your cream of anything soup as directed.
Once the soup base is ready, stir in the chopped asparagus, cooked bacon, and dry pasta. Make sure the pasta is mostly submerged in the liquid.
Cover the pot and let it simmer over medium heat for 10–20 minutes, stirring occasionally to prevent sticking. Cook until the pasta is al dente (tender but still has a slight bite).
If the mixture becomes too thick before the pasta is fully cooked, simply add a splash of milk or broth to loosen it up.
